Let’s have another recipe Wednesday’s.

As it’s the middle of the week, it’s time for our favourite part of the week.

The midway point is the best time to realise it’s almost the weekend.

Hump Day is named for many reasons.

Let’s bust that hump.

Today is an excellent recipe for a couple of reasons.

Great all round fun.

Lasts for a couple of days.

Perfect to bring to friends for a cup of tea.

 

Try out these banana & macadamia muffins

These are simple and ohhh so tasty.

Banana muffins

Ingredients:

Method:

  1. Preheat the oven to 170C.

  2. Set out a muffin tray with cases inserted.

  3. Add flour, sugar, cinnamon, baking soda & salt to a bowl and mix together.

  4. Add the eggs, oil, and vanilla to the mixture and mix until combined.

  5. Fold in the banana, coconut and pineapple.

  6. Spoon into the cases until ¾ full & sprinkle with the nuts.

  7. Bake in the oven for 20 minutes until a skewer comes out clean.

  8. Allow to cool on a wire rack, and enjoy.

These are unbelievably versatile muffins.

You can interchange the nuts if you want, whatever suits you.

We have added 2 tbsp of cocoa powder to give it a chocolatey twist.
