It’s almost that time of year again.

I was walking the other night and realised it was on the way.

Heading down the greenway, I continued.

It was a sudden, illuminating moment.

As the warm glow of the sun receded in the backdrop to a lovely evening.

Replaced by the orange hue of the street lamps.

At least coming to the grips of the end of the summer is the start of the autumn.

So, let's round things off with a couple of summer recipes.

Let’s start with one of my favourites.

This creamy and rich recipe will be a show-stopper for your end-of-summer parties.

Coconut and Lime No - Bake Cheesecake

Ingredients:

For the Crust:

  • 200 g digestive biscuits (crushed)

  • 75 g shredded coconut

  • 100 g butter (melted)

For the Filling:

  • 250 g cream cheese (soft)

  • 100 ml coconut cream

  • 125 ml lime juice (freshly squeezed)

  • Zest of 2 limes

  • 100 g powdered sugar

  • 4 leaves gelatin

  • 2 tablespoons cold water

For the Topping:

  • Lime zest

  • 25 g toasted coconut flakes

Method:

  1. Mix the crushed digestive biscuits, shredded coconut, and melted butter in a bowl until well combined.

  2. Press the mixture into the base of a cake tin (20 cm), covering the bottom evenly.

  3. Refrigerate for 30 minutes to set.

  4. Put the gelatin in the cold water in a small bowl and let it sit for 5 minutes to bloom.

  5. In a medium saucepan, gently heat the bloomed gelatin until fully dissolved. Let it cool slightly.

  6. In a large bowl, beat the softened cream cheese, coconut cream, lime juice & zest, and powdered sugar until smooth and creamy.

  7. Gradually add the dissolved gelatin to the cream cheese mixture, mixing well.

  8. Pour the filling into the chilled crust and smooth the top with a spatula.

  9. Refrigerate the tart for at least 6 hours or until fully set.

  10. Before serving, top the tart with extra lime zest and toasted coconut flakes.
