How Rocky is the Road

Let’s have another recipe on Wednesdays.

In life, there are always ups and downs.

We have good times and hard times.

It’s always a rocky road, but life is about the journey.

The journey is 99.9%, so why not enjoy the process?

So, what process are we using this week?

The ultimate Rocky Road!!

Ingredients:

  • 200g digestive biscuits

  • 135g

  • 200g dark chocolate (70% cocoa)

  • 2-3 tbsp golden syrup

  • 100g mini marshmallows (or chopped regular marshmallows)

  • Icing sugar for dusting

Optional (up to 100g total):

  • Raisins, dried cranberries, or any dried fruit

  • Nuts

Method:

  1. Grease and line an 18cm square tin with baking paper.

  2. Bash the biscuits into crumbs with some larger pieces.

  3. Melt the butter, chocolate, and syrup together over low heat. Cool slightly.

  4. Stir in the crushed biscuits, marshmallows, and any optional ingredients until coated.

  5. Spread the mixture into the tin, chill for 2 hours, dust with icing sugar, and cut into 12 fingers.

This used to be an absolute favourite of mine as a child—truly delightful and immensely enjoyable.

Brings back memories of those happier times.
