It's busy as always, and the hustle and bustle of the market is non-stop.

There is always something going on.

I'm not going to complain, and no one would listen anyway. 🤣 

I’ve chosen this life myself.

Although there are days when it gets a lot, it’s still highly fulfilling.

Being able to do this newsletter and keep you up on the comings and goings in Cork.

Plus, some recipes are very tasty and easy to make.

It makes me try something new.

I can try something different.

Something you guys can try and enjoy.

Let’s try something a little bit different today.

We have to love a trifle.

So, let’s put a little spin on it.

I remember years ago, as a youngster, having my granny make these as a special treat.

Any family gathering, it was always the showpiece the family used to love.

Reverse sherry trifle

Ingredients

  • 600g Madeira cake (shop-bought)

  • 60 ml sweet sherry or personal taste.

  • 2 leaves gelatine

  • 500g custard (made or shop-bought)

  • 2 blocks of raspberry jelly

  • 200g frozen mix berries

  • 200 ml cream

  • 1 tbsp icing sugar

  • 1 tbsp vanilla essence

  • 1 tbsp sherry

  • 1 crushed flake or shaved chocolate bar.

Method

  • Get a 20 × 25cm Pyrex dish. Cut the Madeira cake horizontally to fit into the dish.

  • Sprinkle with the sherry to the amount you want.

  • Bloom the gelatine in cold water.

  • Heat up the custard over a low heat.

  • Squeeze the gelatin to get rid of excess water. Add to the custard and mix thoroughly.

  • Pour over the cakes and allow to cool. Place in the fridge for 30 mins to set.

  • Make up the jelly as per the instructions.

  • Allow to cool, and pour half over the base.

  • Sprinkle the mixed berries over the top.

  • Allow to set in the fridge.

  • Add the rest of the jelly over the top and allow to set.

  • Whip the cream with the vanilla icing sugar and sherry.

  • Top the trifle with the cream and the chocolate.

Finish with cream for the ultimate decadent treat.

This quick and easy recipe can be used while doing other tasks.

It's a great cold dessert that will be a showpiece for you and your family.
