Exam season is kicking into gear.

We're already halfway through the week, and time just doesn't slow down. It's a constant hustle and bustle. With exams in full swing, there's a palpable air of tension across the country.

People's deep preparation and completion of exams as a stepping stone to the rest of their lives are slowly drawing to a close. No matter what, it will all work out in the end. There are a million ways to reach a destination.

Make lemon tart.

Today, let’s make another easy high-quality pastry.

There is another fine recipe that has been tried and tested in fancy restaurants all across Europe.

This lemon tart is simple, tasty and zesty.

Let’s make it really easy for ourselves.

Pick up a ready-made tart case for yourself.

The recipe is for about 8 tartlets or 1 large-size tart.

Ingredients

  • 4 egg yolks

  • 200g caster sugar

  • 200g butter

  • 2 large lemons(juice & zest)

Yes, that’s all the ingredients. the difficult part of this recipe is in the method.

HINT!! Not that difficult just a new skill.

  1. Put a pot on low heat with a small amount of water until the water is just simmering.

  2. Next, put the eggs, sugar and, lemon juice & zest into a metal bowl.

  3. Place the bowl on the pot, ensuring the water doesn’t touch the bottom.

  4. Whisk continuously, until the mixture cooks and becomes almost white. it should be thick and shiny.

  5. Take the pot off the heat and mix for 5 minutes.

  6. Remove the bowl from the pot and mix for 5 minutes more.

  7. Cube the butter into 1cm cubes.

  8. Add the cubes one by one while mixing until combined thoroughly until all the butter is gone.

  9. The mix should be a bright yellow colour, smooth and glossy

  10. Pour the lemon mix into the tart case and set in the fridge for 1 hour.

This new skill is called cooking au Bain Marie. It involves cooking over water with gentle heat. It is a simple yet extremely effective technique.
